#1 Fall Charcuterie Board

As the holidays approach, it’s the perfect time to revisit your favorite holiday snacks, but make it fall: the fall charcuterie board! Nothing screams fall quite like a spread of charcuterie on a lovely wooden cutting board. Fall aesthetic—meet taste buds!

Ingredients

For 6 servings:

  • Cured Meats:
    • 12-18 slices of salami
    • 12-18 slices of prosciutto
    • Optionally add 6-8 slices of peppered or Calabrese salami for extra variety
  • Cheese:
    • 6-8 oz of soft cheese (e.g., brie or goat cheese)
    • 6-8 oz of yellow cheese (e.g., cheddar or gouda)
    • 6-8 oz of white cheese (e.g., manchego or havarti)
    • Optional: Honey, fig jam, or pecans for flavor pairing
  • Crackers:
    • 24-36 crackers (sweet gingerbread or savory pretzels)
  • Additional Accoutrements:
    • 1 cup mixed olives (green and black)
    • 1 cup assorted nuts (almonds, walnuts, or pecans)
    • 1/2 cup cornichons
    • Optional: Condiments like stone-ground mustard, jams, or other spreads
  • Fall Touch:
    • 6 fresh figs, sliced
    • 1 large apple, thinly sliced
    • 1/2 cup dried cranberries
    • 1/4 cup honey
    • Small decorative mini pumpkins for a seasonal touch

Recipe

  1. Start by laying out the meat in a pretty presentation – it’s the foundation of your charcuterie board masterpiece, so be creative!

#2 Pumpkin Parfait

Elevate your fall gatherings with Pumpkin Parfaits! No baking or messy dishes are required – just a bowl and your Mason jars will do the trick!

Ingredients

For 6 servings:

  • 1.5 cups crushed vanilla cookies
  • 1.5 to 2 cups pumpkin puree
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 1.5 to 2 cups whipped cream
  • ½ cup chopped nuts or granola (for optional topping)

Adjust the whipped cream and toppings based on how generous you want each layer to be! We love food at Owenhouse, so for us: the more, the better!

Recipe

  1. Start by layering crushed vanilla cookies.
  2. Next, mix the pumpkin with a touch of cinnamon and nutmeg. 
  3. Then, add a layer of the spiced, creamy pumpkin puree into your jar.
  4. Add a generous amount of whipped cream.
  5. You can top it off with crunched nuts or granola for extra texture. Once it’s done, refrigerate until dessert time.

Originating in New York, these jars are pioneers in the world of canning and preserving. If you’re a home canner and DIY enthusiast, BALL is your kitchen companion! Beyond canning, Ball Mason Jars are incredibly versatile. You can use them for stylish storage (finally, you can store your granola!), DIY crafts, or even charming drinking glasses! And they’re absolutely perfect to serve your pumpkin parfait in!

#3 Pumpkin Skillet Lasagna

Do you know about the cooking versatility of the cast iron skillet? Discover how switching from the stove to the oven can make a delicious dish!

Ingredients

For 6 servings: 

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cups pumpkin puree
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried sage
  • ¼ teaspoon nutmeg
  • ¾ cup heavy cream
  • 1 cup ricotta cheese
  • 1 cup grated Parmesan cheese (½ cup for the filling, ½ cup for topping)
  • 8-10 lasagna noodles (enough to make 2 layers in your skillet)

Recipe

  1. Heat oil in your Lodge cast iron skillet, add onions, and cook for about 5 minutes.
  2. Increase heat and add the pumpkin puree, sage, nutmeg, salt, and pepper. Keep stirring while cooking for about 10 minutes.
  3. Preheat oven to 400°F, and in a bowl, mix the heavy cream, ricotta, and the Parmesan cheese. Season to taste.
  4. Layer your Lodge cast iron skillet with lasagna noodles, half the pumpkin mixture, and half the cream mixture. Repeat and finish by topping it off with grated parmesan.
  5. Cover with foil and bake for 20 minutes, then uncover and bake until bubbly & golden (about 15 minutes).

#4 Easy Pumpkin Shaped Bread

Baking your own bread has never been so trendy! Have you thought about switching things up a bit with a different shape? Read this!

Ingredients

For 12 servings:

  • 3 ½ cups bread flour (you can use all-purpose flour, but bread flour will make your bread hold its shape better!)
  • 2 ¼ teaspoons active dry yeast (1 packet)
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 ¼ cups lukewarm water (not to exceed 110 Fahrenheit degrees for the yeast to rise)
  • 2 tablespoons olive oil
  • Kitchen twine (for shaping)
  • 1 cinnamon stick (for the pumpkin stem)

Note: You can adjust the amount of flour as needed to get the right dough consistency depending if your environment is more or less humid.

Recipe

  1. Mix the dough: In a large bowl, combine the bread flour, active dry yeast, salt, and sugar. Slowly add warm water and olive oil. Stir until a dough forms, then transfer to a floured surface and knead for about 8-10 minutes, until smooth and elastic.
  2. First rise: Place the dough in a lightly oiled bowl, cover with a damp towel or plastic wrap, and let it rise in a warm place for about 1-1.5 hours, or until doubled in size.
  3. Shape the dough: After the dough has risen, punch it down and shape it into a round loaf. Place the loaf on a sheet of parchment paper – it makes it easier to transfer the bread to your Dutch Oven. Use kitchen twine to tie the dough loosely in several sections to create ridges, giving it a pumpkin-like appearance.
  4. Second rise: Now, allow the dough to rise again for 30-45 minutes until slightly puffed.
  5. Bake your bread: Place the dough in your Dutch oven and bake until golden brown. Once cooled, remove the twine to reveal your pumpkin-like creation. And for an extra fall touch, use a cinnamon stick as the pumpkin’s stem!

#5 Red Wine Pot Roast

Looking for the ultimate comfort dish for this season? Our Staub La Cocotte will make the perfect Red Wine Pot Roast!

Ingredients

For 6 servings:

  • 3 ½ to 4 lbs beef roast
  • Salt and pepper (to season)
  • 2 tablespoons olive oil (for searing)
  • 1 large onion, chopped
  • 4 medium carrots, cut into chunks
  • 4 garlic cloves, minced
  • 3 bay leaves
  • 1 teaspoon dried thyme (or a few sprigs of fresh thyme)
  • 1 teaspoon dried rosemary (or a few sprigs of fresh rosemary)
  • 2 cups red wine
  • 2 cups beef broth
  • 2 tablespoons tomato paste

Recipe

For a rich and delicious meal, try making Red Wine Pot Roast in your Staub La Cocotte! (Use one 8 quarts or larger for this recipe).

  1. Start by seasoning the roast with salt and pepper, and immediately sear it in hot olive oil in the cocotte until browned – about 4 minutes per side. Remove the roast and set aside.
  2. Add the onion, carrots, garlic cloves, bay leaves, thyme and rosemary.
  3. Pour the red wine, the beef broth, and the tomato paste.
  4. Return the roast to the pot. Bring it to a boil, then reduce the heat to low.
  5. Cover with the lid and simmer gently for 3-4 hours, or until the meat is tender and easily falls apart.
